Pecan Pie

1 c. brown sugar
1/4 c. sugar
1/2 c. butter, melted
2 eggs
1 Tbsp flour
1 Tbsp milk
1 tsp vanilla
1 c. chopped pecans

Beat eggs til foamy, stir in butter. Stir in brown sugar, sugar, and flour. Mix well. Add milk, vanilla, & nuts. Pour into unbaked 9" pie shell. Bake at 400 degrees for 10 minutes, then 350 degrees for 30-45 minutes.

Peanut Butter Balls

2 c. peanut butter
2 c. powdered sugar
2 c. graham cracker crumbs
1/4 c. butter
chocolate chips, melted

Mix first 4 ingredients & shape into balls. Chill for several hours. Melt chocolate chips in pan, dip peanut butter balls in chocolate chips to coat, let cool on wax paper.

Cherry Dessert

1 can Wilderness Cherry Pie mix
small box yellow cake mix
6 Tbs (3/4 stick) melted butter
1/2 c. chopped walnuts

Put cherries in 8x8" pan. Sprinkle cake mix over top, then melted butter & nuts. Bake at 350 degrees for 45 minutes.

Caramel Rolls

Pecan Halves
2 pkgs frozen bread rolls
1 stick of butter
1 large box butterscotch pudding (not instant)
1 c. brown sugar

Grease 9x13 pan well. Sprinkle pecans in bottom of pan. Place rolls in pan over nuts. Cut butter into pudding mix & sugar. Put mixture over rolls. Cover & let rise overnight on the counter. Bake at 350 derees for 45 minutes.

Baked Oatmeal

2 eggs
2 & 1/2 c. quick cooking oatmeal
1/3 c. veg oil
1/2 c. sugar
1 c. milk
1/2 tsp salt
1 & 1/2 tsp baking powder
3/4 tsp cinnamon
1-2 peeled, chopped apples or 1/2-3/4 c. raisins, optional
brown sugar

Combine all ingredients in large bowl, mix well. Pour into nonstick 8x8" pan. Bake at 350 degrees for 30 minutes. Sprinkle brown sugar on top, prior to baking. Can eat as a muffin, or put in a bowl & pour milk over it.

Skillet Sizzled Buttermilk Cornbread

1 & 1/4 c. flour
3/4 c. cornmeal
1 Tbsp baking powder
1/4 tsp. salt
1/4 tsp baking soda
1 & 1/4 c. buttermilk
1 egg
2 Tbsp sugar
1/4 c. veg oil
2 Tbsp butter

Place 8" skillet in 375 degree oven to preheat. In a large bowl, combine flour, cornmeal baking powder & salt. In a small bowl, stir baking soda into buttermilk. In another bowl, whisk together egg, sugar & oil. Then whisk in the buttermilk. Remove skillet from oven & put over medium high heat on burner. Add butter & heat til it melts & starts to sizzle. Tilt pan to coat bottom & sides. Add wet ingredients to dry & quickly stir together. Scrape batter into hot skillet. Put in oven & bake approximately 20 minutes. (If you don't have a skillet, simply place in an 8x8" pan & omit the stove-top step.)

Popovers

1 c. flour
1 c. milk
2 eggs
1/2 tsp salt

Bake 425 degrees for 40-45 minutes. Can use muffin tin, but popover tin works best.

Easy Minestrone Soup

1 c. thinly sliced celery
1 c. sliced zucchini or 1 can green beans, drained
1 c. shredded cabbage
1/2 c. chopped onion
1 & 1/4 c. water
2 tsp vegetable bouillon granules
1 tsp italian seasoning (basil, oregano)
1 can (28 oz.) whole tomatoes, undrained
1 can (15 oz.) great northern beans, undrained
1 can (8 oz) kidney beans, undrained
1 can (8 oz) whole kernel corn, undrained
grated parmesan cheese
1/2 c. uncooked elbow macaroni

Heat all (except cheese & noodles) to boiling, breaking up tomatoes. Reduce heat, cover & simmer 15 minutes or longer, stirring occasionally. Add macaroni noodles & simmer til cooked through. Garnish w/parmesan cheese. Serve with fresh loaf of bread!

Baked Potato Soup

4 lg baking potatoes
2/3 c. butter or margarine
2/3 c. flour
6 c. milk
3/4 tsp salt
1/2 tsp pepper
4 chopped green onions, divided
12 slices of bacon, fried, crumbled, divided
1 & 1/4 c. cheddar cheese, shredded, divided
8 oz. sour cream

Bake potatoes. Let cool; scoop out potatoes. Make white sauce in large soup pan (butter, flour, milk). Add potatoes, salt, pepper, 2 Tbsp green onions, 1/2 c. bacon & 1 c. cheese. Stir in sour cream. Top w/remaining ingredients after serving in bowls.

Awesome Potato Soup

3 & 1/2 c. potatoes
1/3 c. celery
1/3 c. onion
3 & 1/4 c. water
2 tsp chicken bouillon
1/2 tsp salt
1/2 tsp pepper
5 Tbsp butter
5 Tbsp flour
2 c. milk

Combine the first 4 ingredients & bring to a boil, then turn on medium heat for 10-15 minutes until potatoes are soft. Stir the chicken bouillon & seasonings into soup. In a separate pan, combine the butter, flour & milk. Cook til thick & pour into soup. Heat through & serve.

Caramel Apple Salad

2-3 Granny Smith apples
3 Snickers bars
1/2 bag of mini marshmallows
1 small box of instant vanilla pudding
1 8oz container cool whip

Chop apples & Snickers bars into bite-sized pieces. In a large bowl, put in apples & snicker bars (keep a handful of candy bar set aside). Add the 1/2 bag of mini marshmallows. Stir slightly. In a separate bowl, mix pudding according to box directions & fold in the Cool whip. Mix well. Add this to the large bowl of other ingredients & fold all together. (Do not mix too much or Snickers will break apart.) Place handful of Snickers on top for garnish & chill.

Cinnamon Applesauce

8 medium tart apples, peeled & quartered
1 c. water
1 c. sugar
1/4 c. red-hot candies

Put apple & water in pan, cover & cook 20 minutes, or til tender. Add sugar & candies, cook til dissolved.

Orange Cream Fruit Salad

1 can (20 oz.) pineapple tidbits, drained
1 can (11 oz.) mandarin oranges, drained
green grapes (as many as you like)
1 medium apple, chopped
2 medium firm bananas, sliced
1/3 bag mini marshmallows
1 pkg (3.4 oz) instant vanilla pudding mix
1 & 1/2 c. milk
1/3 c. frozen orange juice concentrate
3/4 c. sour cream

Combine fruits & marshmallows in one bowl. In another bowl, mix pudding & milk & o.j. (can decrease the amount of liquid--I usually cut it down by half so it's not so soupy). Mix for 2 minutes by hand. Then add sour cream & stir it in til smooth. Scoop or pour over fruit salad, stir to combine, and then refrigerate for at least 2 hours before serving.

Broccoli Salad

2 fresh heads of broccoli
8 slices of bacon, cooked til crisp
1 c. shredded cheddar cheese
1/4 c. red onion
1/4 cucumber, peeled
1/4 c. sunflower seeds
ranch salad dressing

Combine all ingredients. Use enough dressing to coat veggies, but not too much. Let refrigerate a few hours before serving.

Creamy Coleslaw

16 oz. coleslaw
2 Tbsp. onion
1/4 c. (or less) sugar
1/4 tsp. salt
1/8 tsp pepper
1/2 c. mayo
1/4 c. buttermilk
1 & 1/2 Tbsp vinear
2 & 1/2 Tbsp lemon juice.

Set coleslaw aside. Whisk together remaining ingredients. Add coleslaw & refrigerate a few hours before serving. Tastes best next day.

Easy Chicken

Flour
2-3 Tbsp melted butter
seasoning salt
pepper
chicken breasts

Spray 9x13 pan w/non-stick spray OR put 1-2 Tbsp butter in bottom of pan & melt in 350 degree oven. Dredge chicken through flour, place meatier side up in pan. Sprinkle with seasoning salt & pepper to your taste, then drizzle melted butter over top. Bake for 35-40 minutes, until chicken is done.

Scotch Krispies

1 12.oz pkg Nestle butterscotch chips
1 c. peanut butter
6 cups rice krispies

Melt chips & peanut butter over low heat, stirring til melted & combined. Add rice krispies & mix well. Pour mixture into pan & place in refrigerator. Cut when cool & serve. Keep refrigerated.

Peanut Butter Oatmeal Bars

1 stick butter
1c. brown sugar
1 egg
1/3 c. peanut butter
1/2 tsp vanilla
1/2 tsp baking soda
1/4 tsp salt
1 c. flour
1 c. oatmeal
1 c. chocolate chips

Mix all ingredients together except chocolate chips. Put in 9x13" pan. Bake for 20 minutes at 350 degrees. Immediately after taking bars out of oven, sprinkle chocolate chipsover top. Let melt, spread, cool & cut.

Speedy Brownies

2 c. sugar
1 & 3/4 c. flour
1/2 c. baking cocoa
1 tsp salt
5 eggs
1 c. veg oil
1 tsp vanilla extract
1 c. chocolate chips

Combine all but chocolate chips in large bowl. Beat until smooth. Pour into a greased 9x13" glass pan. Sprinkle with chocolate chips. Bake at 350 degrees for 30 minutes.

Ham & Cheese Buns

15 buns (hamburger or dinner roll size)
15 slices colby cheese
15 slices deli ham
2 c. shredded mozzarella cheese
1/2 c. margarine or butter, melted
1 Tbsp onion (or 1/2 tsp onion powder)
2 Tbsp mustard
1 Tbsp poppyseeds
2 tsp sugar

Remove tops from rolls. Place 1 slice colby cheese, 1 slice deli ham, and sprinkle some mozzarella cheese over each bun. Combine the melted butter, onion, poppyseed, mustard and sugar & stir well. Pour half the mixture over all the open-faced buns. Replace tops of buns & pour other half of butter/poppyseed mix over top. Bake at 350 degrees for about 20 minutes, until cheese is melted.

"Unfried" chicken

1 c. crushed cornflakes
1 Tbsp flour
1 tsp seasoning salt
1 egg white
1 Tbsp water
6 pcs bone-in chicken

Cominbe cereal, flour, & seasoning salt. Beat egg white & 1 Tbsp water. Dip chicken in egg mixture, then coat w/cereal. Place on pan, coating side up. Spray non-stick spray over top of chicken pieces before baking. Baket at 400 degrees for 40 minutes.

Sunday Chicken

2 smll pkgs Buddig corned beef
6-8 chicken breasts
6-8 slices of bacon
1 can cream of mushroom soup
1 pint sour cream

line 9x13" pan with corned beef. Wrap chicken in bacon. Mix sour cream & soup together & pour over top. Bake at 275 degrees for 3 hours, uncovered. Serve with white or brown rice.

Chicken & Wild Rice

1 box (6.0 oz) Uncle Ben's Long Grain & Wild Rice Original Recipe (not quick cooking)
1 can chicken broth
1 can french onion soup
chicken (either w/or w/o skin)

Empty box of rice in 9x13 pan & sprinkle seasoning packet on top. Pour broth & onion soup over the rice & blend with a fork. Dip chicken in rice mixture & lay on top of rice. Bake at 350 degrees for 1 & 1/4-1 & 1/2 hours.

Tortilla Pie

1 jar (10-11oz) salsa (mild, medium, hot...whatever you like)
1 can (8 oz) tomato sauce
1 can (15 oz.) black beans, rinsed & drained
1 can (15 oz.) canned corn, drained
4 10-inch flour tortillas
6 oz. shredded monterey jack (or cheddar) cheese
sour cream
**chicken pieces can be included for another taste

Preheat oven to 500 degrees. Spray 15x10" pan with nonstick spray. In small bowl, mix salsa & tomato sauce. In medium bowl, mix beans & corn. Place 1 tortilla in pan. Spread 1/3 of salsa mixture on top, then 1/3 bean mixture, then 1/3 cheese. Repeat layering 2 more times, ending w/last tortilla. Bake 10-12 minutes until cheese melts & filling is hot. Serve with sour cream.

Porcupine Meatballs

1 lb. ground beef
1/2 c. instant white rice
3 Tbsp chopped onion
1/4 tsp poultry seasoning (optional, but gives good flavor)
1/4 tsp pepper
1 tsp salt
3 Tbsp butter
2 (8 oz each) cans tomato sauce
1 c. water

Mix all except butter, tomato sauce, and water. Form into 10-12 small balls. Brown lightly in 3 Tbsp butter. Drain off excess grease & add tomato sauce & water. Cover tightly & simmer 45-50 minutes. Serve with pan gravy. Great with mashed potatoes as a side dish!

Roast Beef Burgers

5 lb. arm roast
1 pkg dry onion soup mix
3 beef boullion cubes
2 c. water

Place beef in oven, add all ingredients. Cover & bake in 275 degree oven for 5 hours. Cool & shred or slice thinly. Place back in sauce (if desired) & reheat to serve. Can serve on buns or plain, can add BBQ sauce for different flavor.

Hamburger Casserole

2 c. potatoes
2 c. sliced carrots
2 c. raw hamburger
1/2 c. sliced onions
1 & 1/2 tsp. salt
1/4 tsp pepper (less if you don't care for a little bit of bite)
1 can tomato soup

Place potatoes in bottom of dish, then carrots, then cover w/hamburger. Put onions on top of hamburger, then season w/salt & pepper & pour soup over top. Cover & bake 2 hours at 350 degrees.

Goulash

1 lb. ground beef
1 & 1/4 c. macaroni noodles, cooked
1 can tomato soup
1/2 soup can of water
2 beef bullion cubes

brown beef & drain grease. Add all other ingredients & simmer 5-10 minutes in electric frypan.

Spaghetti Pie

8 oz. cooked/drained spaghetti
1/2 c. parmesan cheese
1 egg
1 c. sour cream
1 lb. ground beef, browned
1 jar pasta sauce
8 oz. mozzarella cheese

Cook spaghetti per package directions (I usually cook a little longer since this dish is baked & the noodles tend to dry out more while baking). Drain spaghetti, then stir in parmesan cheese & egg. Pour noodle mixture into pie plate, making sure to press noodles against sides of pie plate as well for "crust." Place sour cream over top of noodle mixture (just the center of the noodles, not up the sides). Brown hamburger, drain if necessary, then add pasta sauce. Pour this mixture in the center of the pie plate on top of the sour cream. Top with mozzarella cheese & bake in a 350 degree oven for 30 minutes. You can save some pasta sauce to put on plates under servings of pie.

Stromboli

1 tube refrigerated french bread loaf, or make your own dough
2 c. mozzarella cheese or cheddar cheese, shredded
1/4 lb. thinly sliced pepperoni, deli ham, or salami
1 Tbsp butter, melted
1 tsp grated parmesan cheese

On lightly floured surface, pat dough into a 12x14" rectangle. Sprinkle cheese over dough to 1/2" of edges. Top w/single layer of meat. Roll up tightly from short side (will look like a loaf of french bread); pinch seam to seal. Place seam side down on an ungreased baking sheet. Brush top of loaf with butter; sprinkle with parmesan cheese. Bake at 375 degrees for 20-25 minutes or til golden brown. Cool on a wire rack for 5 minutes. Cut w/serrated knife.

Chicken Crepes

2 cans crescent rolls
2 (6-7 oz) cans chicken (fresh chicken can also be used)
1 can cream of chicken soup
8 oz. cheddar cheese, grated

Mix chicken and half of cheese. Place in center of crescent rolls, roll up. Place 1/4" apart in 9x13" pan. Heat soup according to can directions but use milk instead of water. Put the rest of the cheese in the soup until melted. Pour mixture over rolls. Bake at 350 degrees for 20-30 minutes, or until golden brown.
